The Category Choice range includes some highly versatile gift cards such as the Groceries card that works at supermarkets (including to buy other gift cards in some cases) and the Fuel card that can be used at almost any service station.
You can check the Merchant Database for a list of places where some of these Category Choice gift cards have been tested and found to work. For example:

Unfortunately, Amazon have limited the Category Choice offer to one redemption per account so it appears you are limited to a single $500 gift card at most.
Uber gift cards can be used to pay for future Uber and Uber Eats orders as well as those you made up to 30 days ago thanks to the handy switch payment hack.
The Amazon promo credit deal is effectively 3.2% off which isn’t great but is still better than some of the offers they’ve previously run.
Note that Activ Visa gift cards are often more difficult to spend than other prepaid Visa or Mastercard gift cards because they tend to have more restrictions on where they can be used.
